The basic sweet-and-sour Sikanjabeen drink made only from vinegar and sugar (or honey).
Khall / Sirka (vinegar) 1.5 L; Qand Safed (sugar) 1 kg
Boil sugar and vinegar together in a deep pan on medium flame till a concentrated syrup (Qiwam) forms. Rose water (20 mL) may be added to enhance flavor. Serving: 20-50 mL mixed in water.
A favorite chilled/iced drink with a quenching effect; increases urine output and speeds digestion. A good tonic for stomach, liver and spleen; useful for fever, nausea, vomiting, indigestion and obstructive jaundice. Note: Should not be used by diabetic patients.
