A tangy tamarind syrup used as a refreshing appetizer drink.
Tamar Hindi (tamarind) 500 g; Qand Safed (sugar) 500 g
Remove the outer coat of tamarind and soak in 2.5 L water overnight. Mash by hand to release the pulp into the water, then strain to remove sediments. Add sugar to the tamarind water and boil on medium flame till it reaches syrup (Qiwam) consistency. Cool and store in a glass bottle. Serving: 20-50 mL mixed in water.
A refreshing drink and good appetizer; quenches thirst and prevents nausea and vomiting associated with excess bile.
